Breckenridge_galleryThis is a fantastic opportunity to be part of a cooking class and learn culinary skills from a renown Chef who is happy to share with you some of the tricks of the trade.

You will be given a glass of bubbly on arrival and have time to meet and chat with the rest of the group before the class begins. A typical lesson teaches you skills for preparing a 3 course gourmet dinner menu, with ideas for matching wines.

After the class, you sit down to eat together in the dining room where Malcolm will provide a wine match for each course. This gives you an opportunity for general conversation, to gain knowledge about the choosen wine, to discuss any other culinary questions you may have, and of course enjoy the food!

My passion for cooking goes back to my childhood days on the home farm near Methven. My mother was a perfectionist when it came to food and was famous for her hospitality in our community. She was my inspiration.
Occasionally people would call to the house to do ‘business’, but rather than let work dictate their schedule, they often arrived at morning or afternoon tea time perhaps drawn by aromas from the kitchen when food was being served! A beautiful table would be laden with an array of up to ten different cakes as well as beautiful scones, pikelets or muffins all fresh out of the oven that morning. I always enjoyed helping in the kitchen and often collected recipes from my Aunty Maude’s where I used to spend my holidays.

After I left school, I went to work with Maurice Ashworth, a British trained chef working in Franz Joseph. Maurice spurred my interest in furthering my culinary journey which took me to the Royal New Zealand Air Force where I passed the London City and Guilds cookery qualification with Distinction.

While I was in the Air Force, I worked in as many other kitchens as I could to extend my repertoire. After 20 years of culinary adventures in the Air Force, I then moved on and spent time at the prestigious Huka Lodge in Taupo, The George Hotel in Christchurch and the restaurants at Te Awa Farm and Church Road wineries in the Hawkes Bay. I was resident Executive Chef at the home of New Zealand’s Governor General in Wellington and participated at the World Gourmet Summit in Singapore in 2000.

Breckenridge Lodge opened officially in December 2006 and I’ve been sharing my passion for food ever since. I have no secret recipes, I just love seeing people enjoy what I have discovered on my culinary journey.

The wine cellar is well stocked with local and other New Zealand wines as well as an exciting selection from overseas. Malcolm can assist you to choose a wine that compliments your evening meal or your picnic lunch.

Orchid Season draws to a close

Easter Orchid, Earina autumnalis

Yesterday I found a clump of Autumn (Easter) Orchids just opened. These delicate and highly scented blooms are the last of our seasons display and one of very few species to have any detectable scent. Although its cousins E aestivalis & E. mucronata do have a very faint scent. Actually the Easter orchid is a little earlier than I would have expected.

Still out are Onion Orchids…..our smallest orchid….and also the very last of the Ladies Slipper Orchids. The Onion Orchids have had an especially long season this year, as I noticed the first blooms in late October, and by the look of the ones on the Ulva tracks are good for another couple of weeks at least

MorePork

MorePork (Ruru) wondering why it’s nap was disturbed.

While showing my guests a rata vine I inadvertently bumped a large tree fern and out flew a morepork which had been sleeping behind it. It landed in a nearby tree and looked at us somewhat “owlishly” for several minutes. Understandable I guess. Within a couple of minutes it had been discovered by a Bellbird who promptly set up a terrific din, scolding it….. morepork are of course the enemy….. This drew in several of its mates who added to the cacophony, at which point the morepork flew back to its hidy hole to escape from all the attention.

18 bottles of preserved apricots and assorted relishes & chutneys

Summer time is fruit time, and although Stewart Islands climate does not lend itself to fruit trees, Central Otago is not far away, and produces wonderful stone fruit. So when I see a day off coming up on my diary I order fruit for bottling or jam. I quite enjoy making preserves, chutneys and jams and of course they are a welcome addition to our guests breakfast table at Sails Ashore.

The down side of all this is that occasionally I am faced with fruit to do on a fine sunny day. As it was today, so after I returned from Ulva and had carted up from the wharf the pea straw Iris had ordered for winterising her garden I set to and bottled 12kg of lovely apricots, with a further 8 kg pulped and frozen. I must say a cupboard full of preserves makes me feel quite virtuous, although some of our male guests seem to think I’m somehow letting the side down.

Leaving Dunedin airport you will be on a rural 2 way road. please proceed straight ahead: For those driving on the “WRONG” side of the road for the first time please remember keep to the “LEFT”: After a couple of miles you will come to a major T juction with the main arterial route Nr 1 please turn left and proceed straight ahead. You will pass a town called Mosgiel and at the same time come onto the motorway ( 2 lanes in both directions ) to Dunedin after several miles and as you approach the outer city of Dunedin you will pass Carisbrook Rugby stadium on your right and shortly afterwards come to a large intersection controlled by traffic lights. Please keep to the left at this junction and prepare to turn left, keeping hard to the left, you will be in a short part of the one way system. You will be in “Andersons Bay Road” and heading towards “Princes Street” running alongside The Oval, a large open green area.At the next ‘T’ junction please turn right into Princes Street, proceed for about 400 metres to the next set of traffic lights. Do not turn immediately left but keep to the left turning slightly into Manse street “DO NOT GO STRAIGHT AHEAD ON PRINCES STREET” At the very next lights keep left and turn left into High St. This is a steep hill Fletcher Lodge is about 300 metres up the Hill on the right hand side just past “Hope St” on your left. It is clearly signed.

Both share a passion for helping their guests to come closer to the wonders of their adopted homeland. Ewa’s personal hobbies include music, reading and travel.

Keith has rediscovered his youth and takes part in all Masters athletics events, his forte being 100 and 200 metres.

Your host & guide Peter was one time Ranger for Stewart Island, and has over 40 years close association with Ulva

We package a Guided Ulva Island Tour as part of your stay at Sails Ashore. Your host Peter is your guide. Our “Sails” guided Ulva Island walk looks at the natural history of Stewart Island, with the open sanctuary aspect of Ulva Island being the focus, but also touches on the wider New Zealand scene as well. We try to be as interactive as possible and like lots of feed-back from our guests.
The walk is actually very relaxed. Hurrying is not at all part of the thing. Takes a minimum of 3.5 hours. Transfers to and from Sails Ashore are included.
Our preference is to visit Ulva in the late afternoon when most people generally are leaving, as we find most visit in the morning and early afternoon.
Late afternoon seems to give us better birds as well. We use our own vessel Talisker, so can be quite independent of watertaxi timetables.
Party size is generally limited to 6 per guide as we strongly believe that larger numbers seriously degrade guests experience. Tariff is normally $160 pp. (GST Included).
However for guests of Sails Ashore we offer a $25 discount, so $135 pp. In addition if you would like more time on Ulva we are happy to offer our guests a free return.
This is dependent on our actually going across of course, and also that you must keep to our timetable (being ready to leave when we do).
This is a great opportunity to “do your own thing” over the three or 4 hours we will be there with a tour. Normally a water taxi will cost you $25 pp.
Ulva Island is a rare chance to glimpse a little of what New Zealand once was, before people came here. My own background as Ranger in Charge (many years ago) helps us walk you through the fascinating New Zealand story, using the Ulva Island experience, with its birds and plants to illustrate it.

While our preference is to go in mid to late afternoon, when most are leaving the island, and also the evening birds are starting to stir, we do also look carefully at the weather and also guests own timetable and schedule accordingly.

These range from a few minutes to several hours, all are on excellent trails. Some start 2 or 3 minutes from Sails Ashore, other involve a water taxi trip to the trail start, and one, The Mason Bay Coast to Coast” is all day, and has a plane flight, 4 hour walk and water taxi ride.

Peter’s position as Ranger took him all over the Island escorting visiting scientists, archaeologists and film teams. As a fisherman and charter skipper these interests carried on and saw both of us involved in many fascinating projects. Sharing this interest with our guests is a large part of the enjoyment we get from our life on Stewart Island. Iris was Relieving District Nurse here for 15 years, and a foundation member of the Ulva Trust. She’s an enthusiastic gardener and currently looks after 4 gardens.

We also have two Border Terriers, and although the guest rooms are strictly “no dogs”, Millie & Bridie would love to take you for a walk.

The Kepler Suite is a quiet and tranquil room and is an ideal place to unwind in luxury. The room also provides a great view from the private balcony towards Lake Te Anau. There is an LCD television in the room plus tea and coffee making facilities with a fridge, and home made baking supplied daily.

The Luxmore Suite is commonly known as the “honeymoon suite”!! It is a large room with a super king bed, there is a fridge and tea and coffee making unit in the room. comfortable chairs to read your book in or simply watch the day go by, a writing table and chairs and a flat screen television and DVD player. We have some DVD’s which you are welcome to watch at any time. All of the suites are wired for broadband internet access plus there is wireless access, there is also a laptop computer available for your use.

The large balcony offers unobstructed views over the golf course, the Kepler Track, Lake Te Anau and Fiordland National Park.

The Milford Suite is on the first floor in the north east wing.
